  • Tiramisù vegano

    tra le ricette che ho perso a causa della rottura dell'hard-disk [img]graemlins/mad.gif[/img] c'era anche quella del tiramisù vegano fatto con latte di mandorla e tofu (senza uova, chiaramente). L'ho mangiato per la prima volta nel ristorante vegano che si è occupato del catering per il nostro matrimonio. E' davvero ottimo, leggero, insomma, una vera delizia [img]graemlins/slurp.gif[/img] . Ho cercato un po' in rete, ma non trovo la ricetta . Non è che voi...?

    ti ho trovato una ricetta che prevede il pan di spagna, basta che ci metti i biscotti al suo posto (io il sostituto delle uova non saprei dove trovarlo..)

    Vegan Tiramisu
    From (The) I Was A Teenage Vegan Cookbook, Vol. 1 by Max Krafft.

    Sponge Cake
    2 cups flour
    3 tsp baking powder
    1 cup sugar
    1/2 cup soy milk
    10 tbsp margarine
    1 1/2 tsp vanilla
    3 measures egg replacer
    Custard
    2 cups soymilk
    1/3 cup cornstarch
    3/4 cup sugar
    1 tsp vanilla
    1/4 tsp almond extract
    6 tbsp rum
    Cream
    14 oz tofu
    1 cup sugar
    1/4 cup soymilk
    3 tsp vanilla
    4 tbsp cornstarch
    Syrup
    2 cups strong coffee
    6 tbsp Grand Marnier
    Garnish
    Cocoa powder
    Powdered sugar
    1 oz grated dark chocolate
    Preheat oven to 350 degrees Fahrenheit.
    Sift together flour and baking powder.
    In a saucepan, heat soymilk and 2 tbsp margarine.
    Combine remaining margarine, sugar, vanilla, and egg replacer in a mixing bowl.
    Add dry ingredients and hot milk mixture and stir until combined.
    Pour batter into a greased 9 by 13" pan and bake for 30 to 35 minutes until light brown and springy.
    Combine all "custard" ingredients in a saucepan.
    Whisk over medium heat until thick.
    Refrigerate covered with plastic wrap.
    Rinse and dry the tofu. Crumble it into small pieces and place them in a blender.
    Add all other "cream" ingredients and blend until smooth.
    Refrigerate.
    Cut sponge cake into finger-sized pieces. Dip these into the coffee mixture and arrange them on the bottom of the serving dish(es).
    Mix "cream" and "custard" togather and spread half of the mixture over the sponge fingers. Garnish with cocoa and powdered sugar.
    Repeat the prior two steps, creating another layer of sponge cake, custard, and cocoa atop the first. Sprinkle with grated chocolate.
    Refrigerate uncovered for several hours.

        attenta, qui usano il "egg replacer" per fare la base tipo pan di spagna: se tu invece usi dei biscotti puoi fare la custard + cream esattamente come la ricetta che non prevede uova.. se hai problemi a tradurre, fischia

          allora ne approfitto subito per chiederti cos'è il cornstarch (avena cosa? ) e cos' è esattamente il custard, perché leggeno di corsa mi sembrava lla crema, ora però mi sono accorta che non la è . Grazie [img]smile.gif[/img]

            "custard" è la crema pasticcera, in questa ricetta la "imitano" addensando il latte di soia con la maizena e aromatizzandolo alla mandorla vaniglia e rum (+zucchero)
            poi c'è il "surrogato della panna" (cream) fatto con tofu latte di soia (ma penso tu possa usare quello di mandorle) zucchero vaniglia e maizena
            queste due poi vanno refrigerate e alla fine mescolate
